Blue Oyster Stir-Fry

A quick, high-heat stir-fry that makes the most of Blue Oyster's dense, fan-shaped clusters.

Made with Blue Oyster

Ingredients

  • 250g Blue Oyster mushrooms, torn into clusters
  • 1 tbsp neutral oil
  • 2 cloves garlic, sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 spring onion, sliced
  • Pinch of chilli flakes (optional)

Method

  1. Heat the oil in a wok or wide pan until very hot.
  2. Add the mushrooms in a single layer; resist stirring for the first minute to let them brown.
  3. Add garlic and stir-fry for 2–3 minutes until the mushrooms are golden at the edges.
  4. Add soy sauce and toss for 30 seconds.
  5. Finish with sesame oil, spring onion, and chilli flakes if using.

Blue Oyster’s dense, meaty clusters hold their texture well under high heat, which makes a fast stir-fry one of the better ways to show them off.

Storage: Keeps in the fridge for up to 4 days; reheat in a hot pan rather than a microwave to keep texture.
