Lion's Mane

A cauliflower-white cascade of icicle-like spines with a taste often compared to crab or lobster. Forgiving to grow and dramatic to watch — a natural first mushroom.
Blue Oyster
Pleurotus ostreatus var. columbinus
Fan-shaped clusters in soft blue-grey, with a mild, faintly savoury flavour. One of the fastest and most productive mushrooms to grow.
Pink Oyster
Pleurotus djamor
Vivid coral-pink rosettes that fruit fast and dramatically, with a delicate flavour best enjoyed the day you harvest.
Coral Tooth
Hericium coralloides
A close relative of Lion's Mane with a branching, coral-like structure and small tooth-like spines along each branch.
