Ingredients
- 200g Coral Tooth mushroom, gently pulled into smaller clusters
- 2 tbsp butter
- 1 small shallot, finely chopped
- Salt and black pepper
- A few chives, chopped
Method
- Melt the butter in a pan over medium heat until foaming.
- Add the shallot and cook for 1 minute until softened.
- Add the mushroom clusters and cook for 5–6 minutes, turning gently, until golden.
- Season with salt and pepper, finish with chives.
Coral Tooth’s delicate, branching texture is easily overwhelmed by strong flavours — a plain butter sauté is usually the best way to taste why it’s worth growing.
Storage: Keeps in the fridge for up to 4 days; best reheated gently in a pan.
